4.1) Name:
Welsh beef
4.2) Description of Product:
Welsh beef’ is the name given to carcases or cuts of meat taken from specific cattle breeds that are bred, born and reared in the designated area.
4.3) Geographical area:
Geographical area: the whole of Wales.
4.4) Proof of origin:
the Welsh beef cattle industry is richly documented from the Celts, the Romans, the Normans and up to the present day.
4.5) Method of production:
each farm has a herd of beef cattle that are grazed extensively on the natural grass pastures available throughout Wales for most of the year. Cattle are slaughtered between 24 and 27 moths of age in approved abattoirs. Records are kept to ensure that individual animals can be traced to guarantee the integrity of the product.
Minimum requirements with regard to the traceability of the product are:
cattle raised extensively on grassland:
veterinary records according to government requirements;
traceability compliant to Farm Assured Welsh Livestock Protocol. All cattle are tagged with producer’s herd number printed on the tags;
transport and slaughter identification according to Government regulations.

Welsh beef is a product of the traditional extensive farming practices utilising the expertise built up over generations of producers. Welsh beef is derived entirely from cattle bred, born and reared in Wales. The unique character of the product arises from the influence of the traditional hardy Welsh breeds that dominate the Welsh herd and also by the cattle feeding on the abundant natural grassland in Wales, which flourishes as a result of the wet and mild Welsh climate and topography.

4.8) Labelling:
each carcase will be labelled as ‘Welsh beef through the use of collagen labels attached to the four quarters or by roller branding the logo on the skin of the carcase. Following registration of this name PGI (Protected Geographical Indication) symbol will be used in close proximity to the registered name.
