b) Description of Product:
A traditional perry prepared by fermentation of locally grown Perry pears with up to 25% cider apple juice, with a soft slightly floral flavour and pale colour with positive astringency softened by residual sweetness (Sorbitol)

Perry pears and Cider apples have been produced in the local area for over 400 years and these are used in the production of Gloucestershire Perry.
e) Method of production:
Fruit is pressed to produce juice, sugar content and acidity is adjusted as required. The juice is fermented naturally or by the addition of the yeast for a period of up to 3 months. The perry is then racked off and matured for up to 6 months. The final product is filtered and/or clarified.

The perry is produced in the County using traditional, local pears, and cider apples which give the perry its unique fruity flavour and aroma allied with a typical astringency and bitterness.
