b) Description of Product:
Cylindrical shaped, blue veined, white full fat soft cheese, made from cows milk.

Derbyshire, Nottinghamshire and Staffordshire
d) Proof of origin:
Milk is acquired from farms in the geographical area. The cheese is produced only in the area and with the traditional skills and knowledge of the cheesemakers
e) Method of production:
Milk from the designated area is pasteurised and cooled to 30*C when lactic acid, blue mould cultures and rennet are added. The resulting curds are cut and drained and put into hoops. It is then drained and brined, pierced from top to bottom and left to mature for 3 - 4 weeks.

The cheese is made in the designated area with milk from the area, except in times of shortage when it may come from the neighbouring counties of Shropshire and Cheshire. The temperature and climate of the area as well as the local knowledge and skills of the cheesemakers is important in the authentic, unvarying method for producing the cheese.
